 Timbrato del Busti di Toscana

This cheese is the symbol of the Tradizionali family, and is recognisable by the typical red stamp on the upper side of the wheel. It has a relatively short maturation period of 20-30 days. Its paste is very clear, tending to white and elastic, characterised by the presence of small eyes. The taste is sweet, due to the presence of cow’s and sheep’s milk, and slightly acidulous.
