Pecorino Ricche Terre with vegetable rennet
Pecorino cheese with vegetable rennet (obtained from the wild thistle, “cynara cardunculus”), cylindrical in shape with a “bowl” heel. It is treated on the rind with tomato paste which, as well as giving it a natural colour, favours anti fungal activity due to its natural acidity. The use of selected thermophilic ferments makes the paste soft and elastic, with a sweet and delicate taste and regularly distributed eyes. Ideal pecorino for those following a vegetarian diet.
