Pecorino Acciaiolo with vegetable rennet
The name of this fresh pecorino comes from the town where our dairy is located. With its short maturation and peculiar “bowl” shape, it has a white, soft paste and a sweet, delicate flavour on the palate. The rind is thin and varies in colour from light ivory to straw yellow. The use of vegetable rennet makes it suitable for those who prefer a vegetarian diet.
