Pascoli di Pienza e Val D’Orcia

The production of this bowl shaped pecorino cheese is limited by the availability of milk coming from stables located in the Val d’Orcia area. It is a young pecorino with a soft texture and a sweet flavour balanced by a slightly sour note which is typical of sheep milk. The rind is treated by hand with tomato paste at the end of its maturation.
